parsley, a happy mistake

i've made the mistake of buying parsley instead of cilantro before. last time, the unwanted parsley just sat in the fridge and went bad. i couldn't believe i'd made the same mistake again(!) and vowed to use it all up this time. wow (or should i say, pow!), the power of parsley! i'm totally buying it again...on purpose. flat leaf parsley became the focal point for a simple pasta dish thrown together with olive oil, garlic and fresh parm. loved it so much i made it again, with lots of veggies. today it was perfect for an open-faced sandwich with roasted carrots, feta and onions.


i'm starting to realize this is turning into a food blog. when you spend as much time eating and sleeping as i do, well, i guess this is the result.
