i miss mexican food. a lot. every time i go home i have to eat it at least a couple times (usually straight from the airport, on the way back, and as much as i can in between). ny has a lot of everything, but one thing it definitely doesn't have is good mexican food. so the other night i invited a friend over for a mexican fiesta.
the menu: veggie tacos, black beans and rice and plenty of fresh guac and salsa. when i was pescatarian, i used to love fish tacos (and made them every now and again), but these veggie tacos were more than filling.
and for dessert, mexican chocolate tofu pudding. my friend doesn't like tofu desserts, but i guess this one was an exception because we both went back for seconds, stuffed as we were.
