i'm not usually a fan of carrot cake but decided to make it for a friend's dinner party (and also needed to use up the leftover cream cheese frosting from the red velvet cupcakes). i think i'm a fan now, or at least of this version.
it turned out so well that i made carrot cupcakes too (vegan cupcakes will just have to wait). the icing goes on first thing tomorrow morning.
yup, i am a baking machine.
